Super Easy Super Bowl Treat

What kind of a blogger would I be if I didn’t make these chocolate covered strawberries for the Super Bowl? I have seen these all over Pinterest for years and they are still as cute now as the first time I made them back in 2010. This is a super easy treat that you can prepare for your evening in or to take to a party.  I tried to come up with a cute name for these but then “Chocolate Covered Footberries” got stuck in my head and that just grossed me out….  *shudder*

To make these I purchased some strawberries, Wilton Candy Melts in Milk Chocolate, and a tube of White Wilton Sparkle Gel.



I microwaved the candy melts according to the instructions on the package, for about 30 seconds at a time stirring until it is fully melted. Then I added just a little bit of vegetable oil to thin it out and make it easier for dipping. I hand dipped my strawberries and set them on wax paper to harden. Then I just added the lacing detail with the Sparkle Gel and popped them in the refrigerator to cure up. Easy Peasy!

I don’t know anyone who dislikes chocolate covered strawberries. You really cannot go wrong with this easy treat. Further more, if you do find someone who decides to pass… I’ll eat their share. Cause, lets be real I don’t know that mine are going to make it until Sunday. I may have accidentally eaten a few already… you know, for quality control.


West Michigan Wednesday: Sunday Night Funnies at the Riverfront Hotel in Grand Rapids

One of the things I love most about my home is the location! I love living in West Michigan and enjoy many activities around town. I wanted to create a series that explores some of the great things that this area has to offer.

This past weekend I went to Sunday Night Funnies at The Riverfront Hotel in Grand Rapids to see a friend perform.


Sunday Night Funnies is a free admission stand up comedy show featuring local comics. Last weekend the place was packed and it was a lot of fun! The show normally starts at 8:30, but this week they are bumping it up a little bit for some big football game. 😉

So, if you’re looking for something to do on a Sunday night, be sure to stop by the Riverfront Hotel and check it out!

Pillow Talk

I wasn’t going to tell you just yet, but I ordered a couch back in December and it should be coming sometime this week! I maaaay have actually received part of the couch already! I am so excited to finally have proper seating in my upstairs (heated) living room! I can’t wait to share pictures once it arrives and is assembled.

To make my new couch look cozy and inviting, I’ve been keeping my eyes peeled for some lovely throw pillows. Then I came across a beautiful design by Caitlin Wilson Textiles. I really love all of her stuff and I have wanted something for quite a while. But now this Bridge City Blooms design… Be still my heart.


I haven’t been able to bite the bullet and purchase this beauty because it is on the pricey side and I want to be sure. It is really gorgeous though. I’m thinking it may be really pretty paired with this coral fretwork pillow.

I just really love the idea of the delicate watercolor design in contrast with the geometric style of the other two! I like getting removable colors so that designs can be changed out seasonally and laundered.  Where is your favorite place to pick up throw pillows?

Single Serving Chicken and Rice

I am kind of weird about left overs. I got sick once in college, so it’s totally a mental thing. That being said,  it is hard to cook a meal for one person.  I got some positive feedback a couple months ago when I shared my single serving Cherry Tomato Fusilli. In that post, I shared some of the struggles I faced last year finding great things to eat. It can be very challenging to go from cooking for a family down to one person, or a couple people. So, while I don’t consider myself a foodie/chef in any way… I thought I would share one of my favorite recipes that I’ve customized into a quick and easy meal for one!

Chicken and Rice is my favorite comfort food, it was always my request for birthday dinners and special occasions growing up. I was determined to find a way to make it without being wasteful or storing a ton of leftovers I know I’ll never eat.  This is super simple to make and it’s a one dish recipe which is always great for cleanup! If you’re a person that does love leftovers, this is also a great recipe to use up some of that left over chicken!


  • 1/2 cup of chicken broth
  • 1/2 cup of rice
  • Two heaping spoonfuls of cream of celery soup (about half the can).
    Note: you can also substitute cream of mushroom or cream of chicken. 
  • Sliced Mushrooms (Totally optional. I just love mushrooms so I add a few in there for fun!)
  • Lipton’s Onion Soup Mix. (Just a couple of pinches of this go a long way!)
  • Pre-Cooked Shredded Chicken
    Note: You could use leftovers. I just pick up shredded rotisserie chicken from the grocery store and it works great!

Preheat your oven to 350. In a small casserole dish (mine is about 18.5 oz) combine the chicken broth, rice, cream of celery, and mushrooms. Add in a few pinches of onion soup mix to taste. Add the shredded chicken on top. Sprinkle more of the onion soup mix on the top to add a little more flavor and a nice crunch. Bake for 45 minutes until the top is golden brown. Boom. Done! So easy!

This is the first combo that tastes like the family sized batches that I’ve been making for years. It is really yummy and so easy to make. It also cooks in half the time, a great bonus! Hopefully you might find this helpful if you need an easy single-serving meal or if you just need to come up with a quick dish after work.


West Michigan Wednesday: Mama’s Thai Cafe in Grand Haven

This week I had a chance to visit Mama’s Thai Cafe in Grand Haven. They just opened this month and Ive already been hearing great things.

I love the bright cheerful decor and friendly staff. The prices are very reasonable for huge portions. I tried the Chicken Pad Thai and the Thai Sesame Chicken. Both were abosultely amazing! In fact, the sesame chicken is the best I’ve ever had! I’m not even kidding when I say that I ate until it hurt. HaHa!

Even if you’ve never had Thai food before, be sure to stop in and check it out. There are some great staples on the menu including egg drop soup, sweet & sour chicken, orange chicken, and pot stickers. I’m sure everyone can find something to love at Mama’s! I will definitely be going back often. I usually get Chinese take-out once a week, but I’m thinking this may just become my go to place!
